Classic Pasta Carbonara

A traditional Italian pasta dish made with eggs, cheese, pancetta, and black pepper. Simple yet elegant.
Ingredients
- 400g spaghetti
- 200g pancetta or guanciale, diced
- 2 large eggs
- 1 cup grated Pecorino Romano cheese
- Freshly ground black pepper
- Salt
Instructions
- Bring a large pot of salted water to boil. Cook spaghetti according to package instructions until al dente.
- While pasta cooks, heat a skillet over medium heat. Add pancetta and cook until crispy, about 5-7 minutes.
- In a bowl, whisk together eggs, cheese, and plenty of black pepper.
- Reserve 1 cup pasta water, then drain pasta. Add hot pasta to the skillet with pancetta, tossing to combine.
- Remove from heat and quickly stir in the egg mixture, adding pasta water as needed to create a creamy sauce.
- Serve immediately with extra cheese and pepper.
